Camp Recipe: Savory Breakfast Burritos

They say breakfast is the most important meal of the day, and if you've got a full day ahead, this is a hearty option to get fueled up. These delicious breakfast burritos pull together all the essentials of a classic diner-style breakfast in a portable, easy-to-hold tortilla wrap.

Equipment Required:

  • Camp stove
  • Cookset or frying pan
  • Cooking spray
  • Spatula
  • Cooking tongs
  • Mixing bowl
  • Cutting board and knife

Ingredients

Serving Size: 2 burritos

  • 4 eggs
  • 2 large flour tortillas
  • 4 breakfast sausage links
  • 2 cups of cubed hash browns
  • 2 Tbsp. of cooking oil
  • 1 cup of shredded cheese
  • 1 red bell pepper
  • Salt and pepper to taste
  • Salsa to taste

Prep Time: 5 minutes

Cook Time: 20 minutes

Directions

  1. First things first, fire up your camping stove and heat up the frying pan. Add a little bit of oil to the pan and turn the heat to medium. Now go ahead and add in a handful of breakfast sausages. Cook them until they have browned up and are cooked through. Then remove them and set them aside for now.
  2. Now, it's time to add some crunch to your breakfast burritos. Add in those hash browns to the pan with the sausage oils still in there and sizzle them up until they're perfectly crispy.
  3. While the hashbrowns are getting crispy, crack a few eggs into a bowl and whisk them together with a dash of salt and pepper from Coghlan's Multi Spice. Grab your knife and cutting board, dice up the red pepper into small pieces, and cut each breakfast sausage into smaller pieces.
  4. Next, add in your red peppers to the pan and let them sauté for a few minutes until the peppers get slightly fire-roasted.
  5. Then, turn the heat on your stove as low as possible and pour the egg mixture into the pan alongside the hash browns and cut sausages. Let them scramble to perfection, stirring often until they're fluffy and cooked to your liking.
  6. When the eggs are near ready, add in a generous amount of shredded cheese. Once the cheese has melted, you're ready to assemble.
  7. Grab a warm tortilla and load it up with a generous spoonful of the scrambled eggs mixture.
  8. Add in salsa to taste (or hot sauce or if you'd prefer). Fold the sides of the tortilla inward, then roll it up tightly like a pro burrito chef. Repeat the process for as many burritos as your hungry camping crew desires.
