Savory and simple – campfire pizza pockets are the perfect experiential meal that kids can partake in when camping. You can get as creative as you want with ingredients, allowing every camper to build their own pizza to taste. For today's recipe, we are keeping it simple by doing a pepperoni pizza.

Equipment Required:

  • Coghlan's Cast Iron Cooker
  • Cooking spray
  • Cutting board and knife

Ingredients

Serving size: 4 pizza pockets

  • 1 package of Pillsbury Pizza Dough (391 g) 
  • 2 cups of shredded mozzarella cheese 
  • 1 cup of sliced pepperoni 
  • 1 cup of pizza sauce 

Prep Time: 5 minutes

Cook Time: 10 minutes

Directions

  1. Remove the pizza dough from the container and unroll it onto a cutting board. Cut the dough into four rectangles that are as tall as the Camp Cooker, and twice as wide as the Camp Cooker. 
  2. Slice pepperoni into thin slices, grate the cheese, and dice up any other ingredients you'd like to add to your pizza.  
  3. Spray the inside surfaces of both Camp Cooker plates 
  4. Lay one half of the dough over the bottom plate of the Camp Cooker. Gently press the dough into the Camp Cooker. 
  5. Use a spoon to spread pizza sauce onto the dough, spreading evenly to cover the dough. 
  6. Add your pepperoni slices, cheese, and any other ingredient you'd like on the dough. Season with a pinch of salt if you'd like. 
  7. Gently fold the remaining half of the dough over top and pinch the open ends together. 
  8. Close the Camp Cooker and place on a campfire grill over a fire, or hold just above the coals of the fire. Cook for 5-7 minutes per side.  
  9. Once the outer edges of the crust appear to be browned, you can remove the pizza pocket out of the Camp Cooker and enjoy!
